Spicy Breakfast Tacos


Warm, soft tacos stuffed with a zesty combination of scrambled eggs, salsa, shredded cheese and spicy guacamole hit the spot for leisurely weekend brunches or as a weekday breakfast.

  • 2 tbsp butter
  • 1 cup diced Black Forest ham
  • 8 eggs
  • 1/4 tsp each salt and pepper
  • 8 soft flour tortillas (6 inch)
  • 1/2 cup thinly sliced romaine lettuce
  • 3/4 cup shredded Pepper Jack cheese
  • 1 vine-ripened tomato, chopped
  • 1/2 cup Sabra® Spicy Guacamole
  • 1/4 cup thinly sliced green onions
  • 1/2 cup TOSTITOS® Chunky Habanero Salsa


Melt butter in large nonstick skillet set over medium heat until bubbly; cook ham, stirring occasionally, for about 2 minutes or until heated through.  

In bowl, whisk together eggs, salt, pepper and 2 tbsp water until frothy; pour into skillet. Cook, stirring occasionally for 4 to 6 minutes or until set.

Meanwhile, heat tortillas according to package directions. Divide lettuce, scrambled egg mixture, cheese and tomato among warm tortillas; top with guacamole and sprinkle with green onions. Serve with salsa on the side.

Tip: For a slightly different flavor, replace romaine lettuce with lightly packed baby spinach leaves and, if preferred, substitute corn tortillas for flour tortillas.
