TOSTITOS® Buffalo Cheddar King Ranch Turkey

• 4 cups leftover roast turkey, cut into cubes
• 1 quart chicken or turkey stock
• 1/2 cup butter
• 1/2 cup all-purpose flour
• 2 cups button mushrooms, sliced
• 2 packages powdered ranch dressing mix
• 1/2 teaspoon freshly ground black pepper
• 3/4 cup favorite hot sauce
• 1 10-oz. can diced tomatoes with green chilies
• 2 cups buttermilk
• 1/2 14-oz. bag TOSTITOS® Original Restaurant Style Tortilla Chips
• 1 medium yellow onion, diced
• 3 cups sharp cheddar cheese, grated


In a sauce pot melt, the butter over medium heat, and whisk in the flour to make a roux. Continue stirring for five minutes, careful to not brown the roux. Add the mushrooms, powdered dressing mix and pepper, and cook for one minute. Add the chicken stock, whisking vigorously to avoid lumps. Bring to a simmer, stirring frequently, until the stock thickens. Add diced tomatoes, chilies and hot sauce, and simmer for 30 minutes. Add the buttermilk,
and bring to a rolling boil. Add the turkey and remove from the heat. In a casserole dish, lay down a layer of Tostitos chips and top with about one-third of the turkey mixture. Top casserole with one-third of the onions and cheese. Repeat this layering process twice. Bake at 350 degrees for 20-25 minutes, until the top layer is light golden brown and bubbly. Serve immediately.
