Original Shrimp Salad
Try when you have friends over, or when you’re looking for a tasty snack. Perfect for any occasion.
1/3 cup mayonnaise
juice from 1/2 lime
2 tablespoons sour cream
1 cup celery, chopped
1 1/2 cups sweet onion, diced
1 garlic clove, finely chopped
1 tablespoon fresh cilantro or fresh parsley, chopped
1 carrot, grated
2 tablespoons olive oil
1 pound uncooked medium shrimp, peeled and deveined
1/4 teaspoon salt
1 cup fresh pineapple, cubed or 1 (8 ounce) can pineapple chunks, drained
1. In a large bowl, combine mayonnaise, lime juice, sour cream, celery, onion, garlic, cilantro and carrot; set aside.
2. In 12-inch skillet, heat olive oil over medium-high heat, cook shrimp with salt, turning once, cook for 3 minutes or until shrimp turn pink. Let shrimp cool.
3. Toss cooled shrimp and pineapple with mayonnaise mixture; stir well to coat.
