Mediterranean Beet Salad

Mediterranean Beet Salad


For Roasted Beets:
2 Yellow beets
2 Red beets
2 Tbsp. olive oil
1 cup frisee
2 tsp. honey
Pinch of salt
Pinch black pepper

For Herbed Goat Cheese:
8 oz. goat cheese
1 tsp chopped basil
1 tsp chopped oregano
1 tsp chopped tarragon
1/4 tsp orange zest
1/4 tsp lemon zest
1/4 tsp black pepper ground
1/4 tsp cardamom ground
1/4 tsp salt, kosher


For Roasted Beets:
1. Pre heat oven to 400 degrees.
2. Wash beets and slice both ends off.
3. Wrap each beet individually with foil and cook for 1 hour.
4. Remove from oven and immerse in an ice water bath.
5. Once chilled, remove foil, peel and chop into 1” pieces.

For Herbed Goat Cheese:
1. Mix well in bowl, form and shape into 1 1/4 inch log, chill until firm.
2. Slice into 1/4” rounds.
3. Spread Frisee evenly on platter or serving dish.
4. Place beets and cheese coins on top of Frisee.
5. Drizzle with olive oil and honey. Salt and pepper to taste.
