Dill Encrusted Trout
For a lighter alternative to fried fish, this is a quick and easy family-friendly dinner.
3 trout fillets
1 tablespoon olive oil
2 tablespoons hummus
1 tablespoon fresh dill, chopped
1 teaspoon lemon juice
1 1/2 oz. TOSTITOS® Original Tortilla Chips or TOSTITOS® Simply Yellow Corn Tortilla Chips, finely crushed (about 9 whole chips or 1/2 cup crushed)
1. Preheat oven to 425°F.
2. In a baking dish lightly coated with olive oil, place trout skin- side down.
3. Combine hummus, dill and lemon juice; spread over top of fish.
4. Top with chips, pressing lightly to adhere to fish.
5. Bake for 12 minutes or until fish flakes easily with a fork.
6. Serve with lemon wedges.
