Citrus Salsa Verde Dip

Traditional tomatillo salsa gets a sunny twist with the addition of orange and grapefruit, adding vitamin C, fiber and tons of flavor to this tasty dip.


1 pound tomatillos (about 12 medium)
1 large jalapeño pepper
¾ cup fresh cilantro, coarsely chopped (stems and leaves)
2 tablespoons chopped green onions (about 2)
1 tablespoon lime juice
1 teaspoon honey
¼ teaspoon salt
2 large navel oranges
1 medium ruby red grapefruit
1 (10 ounce) bag Tostitos® Scoops!® tortilla chips


Place tomatillos in medium sized pot. Fill with water to cover tomatillos. Cover with lid, place on stove and bring to a boil. Let boil over medium-high heat for about 15 minutes or until tomatillos are soft when pierced and about to burst. Remove from stove and drain well.

While tomatillos are cooking, place jalapeño pepper on a tray under the broiler. Turn with tongs every few minutes until skin is completely blackened. Remove from broiler and cool slightly. Remove stem, membrane and seeds with a paring knife.

To prepare oranges and grapefruit, place fruit on a wooden board and slice off skin with a knife, removing all the white pith. Cut fruit into sections, remove any seeds and then chop into small pieces. (Keep one chopped orange separate from the other fruit as this will be put into the blender.)

In a blender, add cooked tomatillos, roasted jalapeno, cilantro, green onions, lime juice, honey, salt and one chopped orange. Blend until thick.

Pour into container and mix in remaining chopped orange and grapefruit. Chill in refrigerator for at least one hour. Chill overnight for maximum flavor. Allow dip to come to room temperature before serving with Tostitos® Scoops!® tortilla chips.
