Chicken Enchilada Soup

Serves: 4-6


¼ cup Butter
¼ cup Flour
1 cup Chicken broth
1 cup SUNCHIPS® HARVEST CHEDDAR® Flavored Multigrain Snacks, finely crushed
1 – 1.25 oz package Taco seasoning
1 – 15 oz jar TOSTITOS® Medium Chunky Salsa
1 quart Whole milk
2 cup Pre cooked chicken, ½” dice


1. In a medium pot, cook butter and flour over low heat for 7 minutes, add taco seasoning and cook for an additional 2 minutes.
2. In a blender add TOSTITOS® Medium Chunky Salsa, SUNCHIPS® HARVEST CHEDDAR® Flavored Multigrain Snacks, chicken broth, and puree until smooth.
3. Pour pureed mixture and milk into pot and add chicken, cook over med heat for 5-7 min until it reaches a simmer stir occasionally.
4. Recommended garnish- avocado slices, sour cream, and cilantro.
