Fig & Cherry Dessert Bars

Add these gluten-free dried fruit bars to your holiday cookie tray or serve with whipped cream as a festive dessert. Change up the flavor by using different dried fruit like apricots, plums, raisins or cranberries.

Makes 18 bars


Fruit glaze:
2 cups chopped dried figs
1 cup orange juice
1/3 cup honey
3 tablespoons cornstarch
1 cup chopped dried cherries
Zest of one lemon

Bar crust:
1 1/3 cups gluten-free oats
1 cup crushed Lays® Wavy Original potato chips (about 4 ounces), divided
1/3 cup brown sugar
¼ cup unsalted walnut bits
4 tablespoons unsalted butter
2 tablespoons canola oil
½ teaspoon ground cinnamon



  1. In a large pot over medium heat, stir together figs, orange juice, honey and cornstarch.
  2. Once simmering, stir constantly for about 5 minutes until fruit mixture becomes thick and sticky.
  3. Remove from stove and mix in cherries and lemon zest. Set aside.
  4. Preheat oven to 350 degrees Fahrenheit.
  5. In a blender or food processor, add oats, ¾ cup crushed Lays® Wavy Original potato chips, brown sugar and walnuts. Process until combined.
  6. Cut butter into small pieces and add to blender along with oil and cinnamon. Process until crust comes together.
  7. Remove 1/3 cup of the crust, add to a small bowl and combine with remaining ¼ cup crushed Lays® Wavy Original potato chips. Set aside to use as a topping.
  8. Coat a 9x13-inch pan with cooking spray.
  9. Press remaining crust evenly into bottom of pan (crust will be thin.)
  10. Spread fruit glaze evenly over top crust.
  11. Sprinkle reserved crust and chip topping over top of fruit glaze.
  12. Bake for 35-40 minutes or until crust becomes golden brown. Remove from oven and let cool for at least 30 minutes before cutting.
